Red lettuce with bacon and pecorino

Preparation

Cut the cucumber into slices. Cut the radicchio (or praise, or remove bitter core) into thin strips and put them in a bowl. Fry the bacon brown and crispy. Keep the bacon fat. Whisk the sauce of vinegar, mustard, oil and bacon fat. Pour over the radicchio. Divide the pickle and bacon over the salad. Finish with some grated (Parmesan) or pecorino cheese. Grind a little pepper over the salad.

  • pack meager (salted) cubed
  • 1 large sweet and sour gherkin
  • small lettuce raddicchio (may be chicory, then use two stumps)
  • 1 tablespoon white wine vinegar
  • 1/2 teaspoon mustard
  • 2 tablespoons of (olive) oil
  • (Parmesan) cheese or pecorino
  • freshly ground pepper
