Radish Salad with Arugula

Preparation

Boil the potatoes, let them cool and cut them into pieces. Mix the vinegar and oil and season with salt, pepper and a little sugar. Fold in the radishes, potatoes and onion on. Arrange the arugula on plates. Spoon about the mixture. Serve warm or cold.

Ingredients

  • 800g new potatoes
  • 250 g rocket
  • 2 bunches of radishes: sliced
  • 2 young onions (or a bunch of spring onions) into rings
  • 4 tbsp olive oil
  • 2 tablespoons white wine vinegar
  • pepper and salt
